My Main Concern
My main concern here is that if I don't do it their way, that they will go ahead and press for a judgement against me at some point even if I am making payments.
They are telling me that they will give me an assurance in writing that they won't do this if I give them access to...
What are my alternatives? If I am sending them money, can they still press for a judgement? Do they have to right to refuse to make any deals with me unless I turn over access to my checking account?

I think I found my own answer. According to the FTC website, the owner of the debt is referred to as the consumer. Their definition of consumer appears to include the spouse.
If I am misreading this or am just flat out wrong please let me know.
