Upon submission of my resignation to my employer, with proper two week notice, can they keep my unused accrued sick leave? If they cannot keep the unused sick leave, do I get paid at my current pay rate?

Generally speaking that is up to each company to decide. If it is in their company policy to pay you in cash for the unused sick leave (at your usual hourly rate) then they will do that. If it is not in their company policy, they won't pay you. However, NC may have a state law that says every company will handle the situation the same way, and that way is X.
