Animal Control Citation

I recently received a citation from Seminole County animal control in Florida because my dog barked excessively. How do I defense myself?
My dog is a guard dog. He lives in the backyard. He barks when strangers aproach or when he hears noises. He barks when another animal: dogs, cats, possums, etc. are around. He only barks at my backyard neighbor's house.
Do I stand a chance in court?
Are there any rights for me and my dog?

You see, despite the fact that the dog is indeed annoying the neighbors, our poster will fight to the bitter end to defend his 'family'. Fortunately, they are about to lose in court and have an order slapped on him..
