My Grandmother has a trust fund or inheritance for me which I don't want to discuss with her due to health concerns. My question is can I give a i.o.u. to someone for a small amount (under 15,000.00) without proof I have that money coming to me when she passes away?

It may not be a good idea to do that. What do you owe the money for? Signing the IOU would only be a further admission that you owe the debt, and the person you owe the money to could sue you in civil court to collect the debt. Better for you to wait until grandmother dies and you know for sure whether you are a beneficiary.
