Can She do "Self Adjustment of Status" herself?

What is the name of your state? Texas.

My legal wife of almost 4-months left me about 3 months ago and took my infant son to a women's shelter since then with no contact (i.e. e-mails, phone calls to anyone outside including her mother and me). I was falsely convicted of domestic violence of minor nature (i.e. a few days in a county jail and serve cost/fine/time concurrently and the bail was set at $1,000.00). She scratched herself and called 911 and got me into trouble with the law because she was bittered that I called her "ugly". However, she left all immigration papers (i.e. I-129F and I-485 petitions) but took my son's U.S. passport and birth certificate with her. Recently, I had learned from Child Support Service that she collected public assistance. I wonder how can she do that when her I-485 is pending (since 9/2004) and we missed the first interview for AOS on 2/2005. Can she apply for the green card -with the help of other organization by herself? She doesn't speak English nor drive nor work and probably lost even in a small city. She entered to the U.S. via the K-1 visa. Any information are appreciated.
