Recently my employer included a sick/absence policy with our paychecks. Is an employer allowed to arbitrarly change or create policy at will? Am I bound to accept this policy and its consequences? I have a written statement of their offer of employment and nowhere does it state, nor have I ever received, a copy of employee policy(s). I live in North Carolina

Most employers have big clauses that expressly state that all employees are employed "at will" and the company may change any rules at any time. If you had a contract (written or in some states oral) that said otherwise, you're okay. If you have a union, most changes can't be unilateral. If neither, the boss can change the rules and if you don't like it, you're free to quit. Not fiar but that's the law.
