Quick question: If one or both of the witnesses to the signing of a Will are deceased can this open up the Will to legal challenge by the beneficiarys' even with a "no contest" clause ?

Only if the beneficiaries can prove that the witnesses didn't sign the document while they were alive - and they prove that the will is invalid without those signatures.
