What is the name of your state (only U.S. law)? Delaware

We have a 16 yo with pragmatic lang delays (does not elaborate). School covers up his disability. They even cheated on state tests (by the way can we suit over that?), and we have confirmation on school and state letterhead.

My real question is that we want to record conversations with teachers today at his conferences. We do not want to tell them. We plan to use them only if they lie about what they said, etc.

That is no longer correct.
Delaware Tilte 11-Chapter 24-Subchapter I-Section 2401:
.....(c) Lawful acts. -- It is lawful:

**************...(4) For a person to intercept a wire, oral or electronic communication where the person is a party to the communication or where one of the parties to the communication has given prior consent to the interception, unless the communication is intercepted for the purpose of committing any criminal or tortious act....

So, as long as you are party to the communication, meaning actual at the meeting, and the teacher or administrator doesn't specifically bar you from recording (i.e. "we don't want you recording this conversation"), then you can record the conversation.
