What is the name of your state (only U.S. law)? GA

I am suing a company in Arizona. I have already filed the initial complaint. Do I have to wait until the other party is served to start discovery? My witnesses live in Georgia also so can I have written depositions and if so how would I do that? Now that the lawsuit has been filed would it be a good idea to send them a settlement proposal?
