Prove that the person who owns the e-mail address actually sent it and that it was received by the person it was intended for and you still don't have legal notice.

Emails are easily modified and as such, most courts will not accept them as evidence. Some email servers may keep a message after it has been viewed and you can subpeona the host for the original message with all headers and routing information. Most email servers delete messages after they have been downloaded to the recipients computer so this generally does not work.
