EAD / AP - Can I do it now ?

What is the name of your state? CA

My employer filed for my I-485 / I-140 sometime in Sept. He did not file for my (and my spouse's) EAD and AP document at that time.

Can I file for EAD and AP (for both of us) now ? Are there any pro's / con's ?

Yes, you can file for them now. There are no cons except that the principal applicant must still be working for the petitioning employer and not simply change positions because he can do so on the EAD. As for the AP, the only con is that if you have been unlawfully present in the US, you should not be using this as a travel document.
