If I live in country A, and want to hire someone to work for me in country B, how would I go about forming the contract and employment agreement? Would they be considered a full time employee? What would they qualify for?

Additionally, which country would the contract and employment agreement be enforceable? Country A or B?

Another slightly irrelevant question which might spring from this is also the possibility of hiring those on a student visa, what they may qualify for, and how one would go about it.

Any contribution is vastly appreciated.

Your question cannot be answered as asked. The laws of the respective countries would come into play. There is no one size fits all answer that applies universally.
