I was fired for going out with a guest even though I have never seen an employee handbook. Since the incident I have asked for, in writing, the reason I was fired. My former manager has refused. She has since made me sound horrible. Can she do this? And if there is nothing against going out with guests can I successful sue her for false termination and/or defamation of character?
Please Help!

Based on what you have written, I don't see that you have a legal case for wrongful termination or defamation. I am assuming that your state has an at-will policy (or something similar) to my state's policy. In CA, an at-will policy means that the employer can terminate you at any time, with or without a reason. Also, the employee can quit at any time, with or without a reason.
