What is the name of your state (only U.S. law)? GEORGIA

I was ticketed for following a police car too closely.

I was driving 35 mph when we entered a school zone. The police car in front of me hit the brakes and reduced speed. I hit my brakes and ended up close to him but did not make any contact. He pulled me over and said that I didn't follow the 2 foot/2 second rule and cited me for tailgating him and trying to chase him off the road (why would anybody be stupid enough to do that to a cop?!?). Is this worth fighting? And how would I go about defending and proving my case in court?

Tough case for the officer to make if you didn't actually hit him. If you didn't hit the officer than you weren't driving too fast for conditions which is a corollary of following too closely.

The law doesn't really specify something objective here. I'd fight it enough if its Roscoe P. Coltrane.
