is there anything that can be done legally about harrassing and defamatory e mails from fiance's ex boyfriend

Yes, delete them or filter them out using your email program.

Unless they threaten bodily injury or harm or raise to the level of a criminal violation, the person writing the emails is generally protected by free speech.

Civilly, unless they cause you 'damage' of some measurable level, there is also little you can do.
