What legal ways are there for 2 unmarried cohabitating adults to own a home equally? We would both want the option of leaving our half to our adult children upon our deaths.

Yes; this is called tenancy in common. When one tenant passes, his share goes to his heirs. Have a real estate lawyer draw up a deed. (I have seen lots of deeds messed up by non-real estate lawyers; get a good one.)

There are several other ways to do what you are asking. Talk to the good lawyer.....
