My husband and I loaned $800 to a fellow employee of his because the hotel he was staying at totally messed up his bill. We have a copy of the receipt showing that his room was payed on our credit card. He hasn't payed us back and we want to know what legal action we can take?

First, have you written him a demand letter asking for the money??? If not, do it now. Send it Certified RRR. In it, detail the 'loan' date, amount, etc. Ask for him to contact you to arrange repayment within 5 business days from reciept.

Then, if he doesn't respond, you will need to consider taking him to Small Claims court. Since you do not have anything in writing (other than the letter above), it will become a 'he said, she said' issue of who is the most credible.
