What is the name of your state (only U.S. law)? Florida.
My late fiance passed away and our daughter is on his SSI and VA.. my current fiance wants to adopt her. will this interfere with her benefits as far as her father? DEERS, Social Security, he doesnt want to change her name but wants to be her father and legal custodian if something happens to me... can some one assist me on this?

If your new fiance adopts her, your old fiance will no longer be her father. Not will there be any responsibility (as far as I know) for his estate or SSI/VA to provide for her. You don't get to play on both sides of the street.

Not correct as far as the SSI is concerned. An adoption does not take away the children's survivor's benefits. I am certain on this one as I helped a friend research this for a similar case.

I have no idea however about VA benefits.
