What is the name of your state? Florida
I would like to know if it is legal in Florida to charge employees of a restaurant (waitperson, bartender) for any mistakes. For example, if a person orders a steak medium-rare, and the waiter punches in medium or well-done by mistake, is it legal for the management to make the waitperson pay full-price for the mistake? Also, if a customer skips out on the check, must the waiter pay the check?

In many if not most States, requiring employees to pay for "quality defects," scrap, poor workmanship, etc. is prohibited. I don't know whether that includes Florida however.

You should contact FL's Department of Labor - which is named the Department of Workforce Innovation - and inquire about this.

According to my source, FL law is silent on the issue of making employees pay for shortages, losses, breakages and errors. You will need to talk to the DWI.
