What is the name of your state (only U.S. law)? Florida
If my lease ends January 31 (Feb 1st) and I pay January's rent and move out January 1st the landlord cant re-rent the place until Feb 1st. Would that be correct?

Technically it would still be yours until the end of January, so no, the landlord could not rent it out earlier than 2/1 without compensating you.

Of course the lease can rerent the rental unit. Many landlords feel uncomfortable with an empty unit, fearing increased chances of break-ins.

If it is rented in January (and rent is collected from the new tenant for that month) , the landlord would need to compensate you for the rent you paid for that month.
