What is the name of your state? Texas
Background: I worked for a company that emplyees 800. I was one of 8 that travel considerably. My weekly hours often total 60-70+. I was supervising nobody yet I was still considered exempt. I asked for some flex time but was denied. Can I claim back wages as a result of this?

Not based on what you've posted. Supervision is NOT a requirement for exempt status, and regardless of whether you are exempt or non-exempt the employer has no legal obligation to offer you flex time.

I had always thought that supervision is one requirement along with the job being "critical to the functioning of the business" (see CEO, CFO). Perhaps I am wrong?

There are several different types of exemption. Only one, the Executive exemption, requires supervision of other employees as part of the definition. The other exemptions, (administrative, professional, sales, computer) do not require that you supervise anyone. While often these exemptions will include supervision, it is not required under the legal definition.
