You shouldn't be required to plead on your first appearance. So don't worry about pleading not guilty.
I don't know if I believe the state will charge you with a DUI if you show up unrepresented rather than letting it go if you show up with an attorney...I just don't know.

Go by yourself and see what you are charged with. Then ask for a continuance so you can talk to a lawyer before deciding if you're going to plead.

Legally, can a lawyer help a victim outside the county or on the opposite side of the state? OR do they need to be associated, or licensed to serve citizens within that county?
Answer: as long as the attorney is licensed by the State Bar Association in the state your charge is in, they can represent you in any county. There is no seperate licensure requirement in seperate counties. A local lawyer, however, may be more familiar with local custom, procedure, judicial tendencies, the local DA, etc. So a local attorney may have more pragmatic experience with your particular jurisdiction.
