Loan to friend-Collection Recourse

I loaned a large sum of money to a friend who has since move to Portugal. I have repeatedly contacted her over the last year only to get the run around from her. What is my recourse in getting this money back????

Do you have any proof of the loan?

Also, "large sum" could be possibly mean it's too much to go to small claims court (i.e. $6,000 in TX is $1k too much).
