What is the name of your state (only U.S. law)? San Diego, California

I share a garage with my neighbors. I don't share a driveway with them. I want to demo my half of the garage and put up a fence. Do I need my neighbors permission? Can I even demo half of a shared garage?

I suspect that you would have some fairly serious problems if you did that, unless you properly rebuilt their side wall to enclose their share of the garage.

You need an engineer and an attorney.

Quite honestly, depending on factors and if possible, it may be cheaper to relocate the structure solely to the other side of the property line than to cut it in half down the property line and leave half standing.

That would of course require their agreement, but all told could be much cheaper for you.

Is this a twin home property ? If it is then is there any language in the title of your home that addresses that garage and any so called common area items such as this garage ? If you each have a clear lot line between you then would your city require set backs to be followed ?
